I had access to up in the Great White North:
For me it is just plain old Eastern White Pine. There are
still some pretty big trees around, although the large clear
boards do command a hefty price. I picked up a lift of
4/4 12" wide white pine a few years ago at an auction.
It was about 75 cents (CAD) per board foot, but all the
pieces were 6 feet long. I can't count the number of
times I said ARRGH and drove off to the lumber store
for a longer stick. None of the boards were clear, but
many had only a few widely spaced knots.
When making the panels I just cut a hunk of cardboard
to the desired size and laid that on the planks as a cutting
guide to lay out the blanks. It did make for some waste
but I got nice clear stock for my panels.
One thing for sure, pine is a challenge to carve. Your
gouges have to be VERY sharp to make clean cuts.
The rest of the construction was easy, mortices are
a breeze, planes leave a crisp smooth surface.
And now it's gonna be bashed and bumped and
dented and scratched, but that's what I made it for.
