I don't know the why's and wherefore's, but palette knives
(cooks' not artists') seem to come in two styles; one is parallel
and quite stiff, and the other tapers towards the end,
and is very thin and flexible.
A quick google has failed to find either names
for the variants, or any rationale, but I own
one of each. (*)
