Isn't the primary function to get a level line of teeth?
Aren't the flat tops just incidental?
I would only joint a saw if the teeth had become uneven after
repeated hand sharpening.
I used your tenon saw sharpening notes the first time I sharpened
a tenon saw and they are good :-)
