Tom,

I built such a system, about a year ago.  My bench weighs about 300 pounds,
so it's a bear to move.  I attached the hinges on the outside of the legs
and have a removable lever (7/8" dowel, in my case) that's perpendicular to
the caster boards so that you pull the lever outward to raise the bench.
You can then wedge a board between the lever and the legs to hold the bench
on the wheels.  I find that a 24" lever is long enough, but it does take
some strength; I push against the leg with one arm and pull the lever with
the other.

Great minds think alike ;-)!    It's not very pretty, but it works quite
well.  I made my caster boards out of fir 2x4s intending that I would test
the concept, then replace it with hardwood to match the bench's legs.  I
just haven't gotten around to it ;-(.
