I've only made one new wedge for a plow plane (to make it fit the
replacement irons), so I'm no expert.

I've tried both plastigage and modeling clay.  Neither worked that
well for me, because I wasn't able to get the wedge out with the
marking material in place. I ended up using the candle-smoke method, and
shaving the high spots off the wedge.  It worked pretty well, and it was
pretty easy.

I ended up popping off the top of the finial on the wedge while trying
to make it look pretty, proving I'm no expert.
