Tony: That is an interesting design. I guess the meat stays put and turns properly because of the multiple rods? Do you need the sheet metal on the side to reflect heat? We have cooked pork roasts and 1/4 of venison on those racks as well. Usually feed at least 60 people total (lots of Dutch oven magic as well including pies).
