Josh,
  I have done exactly this.  I ended up taking about 3/4" off the blade but
it went fast and easy.  I basically treated it as a chisel where I had
severly nicked/dropped on the floor the edge.  I ground it square to the
wheel until I had gotten rid of all of the back bevel and then I ground in
a new primary bevel on the correct side.  The big disadvantage I ran into
was I used my nice fine white wheel and used up about 1/2" of it.  So if
you do this use a corse wheel.
